Carando® Mozzarella Rustica Meatballs
½ package
Carando® Pancetta, diced
¼ lb.
Carando® Pepperoni, diced
¼ lb.
Carando® Sweet Italian Sausage
½ package
Carando® Capicola
¼ lb.
Refrigerated pizza crust
1 package
San Marzano tomatoes
1 28-oz. can
Tomato paste
2 Tbsp.
Fresh garlic cloves, minced
Small shallot, minced
Dried oregano
1½ Tbsp.
Fresh basil, minced
1¼ cup
Mozzarella cheese, shredded
1½ lb.
Parmesan cheese, grated
½ cup
Crushed red pepper
1 tsp.

  1. Preheat oven to 375ºF.
  2. Cook the meatballs and sausages according to package instructions. Remove from oven and allow to cool.
  3. Increase oven temperature to 450 F
  4. Render the pancetta in a skillet over medium-high heat, drain and reserve.
  5. Place the tomatoes, tomato paste, garlic, shallot, oregano, and basil in the bowl of a food processor and process until just slightly chunky. Reserve.
  6. Slice the meatballs and sausages. Reserve.
  7. Sprinkle one-third of the mozzarella over the dough, then top with the desired amount of sauce.
  8. Sprinkle the crushed red pepper and Parmesan over the sauce.
  9. Top the pizza with the remaining cheese.
  10. Evenly spread the meatballs, sausages, pancetta, pepperoni, and capicola over the pizza and bake for 15 minutes, or until bubbly and golden brown.
  11. Allow the pizza to rest for 5 minutes then cut into squares and serve.
